Kovaikai fry


Ingredients:


Kovakkai - 1 cup (Slitted) 

Onion -  1 no (chopped)(optional)

   
Red chilly powder  - 1 tbs

Coriander powder   - 2 tbs 

Turmeric powder   - 1tsp 

Asafoetida  - a pinch

Salt  to taste


For seasoning:


Oil - For frying

Mustard seeds  - 1tsp  

Cumin seeds   - 1 tsp

Black gram dal  - 1 tbs 

Curry leaves  - a handfull 


Method:


Wash and cut kovakkai length wise, slit into two pieces. 

Heat oil in a pan splutter mustard seeds, black gram dal (Split), curry leaves, asafoetida


then add onions  fry for some time. 

Then add kovakkai, red chilly powder, 

coriander powder, turmeric powder, little salt

and fry for some time  till the kovaikai comes crispy.  

Serve hot with any rice items.
